Selection and preparation of ingredients
You can choose a whole carcass of chum salmon and cut it into pieces or buy steaks. When buying a whole fish, you should choose a carcass with red gills, without turbidity in the eyes and not having an unpleasant odor and stickiness. Cream is taken with a fat content of 10–20%, and they can be replaced with sour cream.
Important! You should refuse to buy fish with green or slimy gills, lagging and damaged skin, dry fins and tail.

- Heat the pan, put the steaks in it and immediately pour the cream. Sprinkle with spices.

- Cover the pan and simmer the fish for another 5 minutes. until the cheese is completely melted.

- Peel the steaks and put in a baking dish. Grate the cheese on a fine grater.
- Melt butter in a saucepan. When it melts, add a spoonful of flour, brown it until brownish, stirring.
- Then add sour cream to the stewpan, salt and pepper. Mix well and let the sour cream combine with all the other ingredients in the saucepan.
- Add tomato paste to the sauce and mix well.
- Remove the finished sauce from the heat and put about 3 tbsp. l for every steak. Garnish each one on top with three olives.

- Cut a quarter of the lemon and squeeze the juice into pieces of chum. Salt and pepper.
- Put cherry tomatoes around the fish.
- Wash and cut rosemary in 3-4 cm lengths, lay them on top of fish steaks.
- Pour steaks and tomatoes with vegetable oil.
- Put in the oven and bake at + 180 ° С until cooked (40-50 min.).
- Peel the garlic and wash. Cut the teeth into thin plates.
- Wash, dry and chop dill as finely as possible. Do not use coarse stems.
- Put chopped garlic in a bowl, add walnuts, cream, salt and pepper. Grind everything with a blender. Add dill to the thickly sauce and mix well.
- Remove the prepared steaks from the oven and serve with creamy nut sauce.

- Wash and cut the mushrooms into small pieces.
- Heat the pan and brown the chopped onion on it.

- Salt and sprinkle the mushrooms with spices, pour in the cream and mix. Simmer the sauce for another 2-3 minutes, without bringing to a boil.
- Put a little sauce on the bottom of the baking dish and place the chum salmon steaks on top of it. Spread the remaining sauce over the fish.
- Bake chum salmon in the oven at a temperature of + 200 ° С for 30–40 min.
