Potato stew with chanterelles is a wonderful and very tasty dish that is quite easy to cook at home. To prepare it, you will need the simplest products and minimal culinary skills.
Selection and preparation of ingredients
If you collect the chanterelles yourself, do it away from the motorways. Ideally, in a forest located far from roads and large settlements.
In the event that you purchase mushrooms on the market, try to meet the following criteria:
- small or medium size;
- the fruiting body is elastic, the stalk is rather thick and not dense;
- the color is golden yellow;
- pleasant smell with fruity notes;
- the surface of the mushrooms is tender, without mucus.
Do not need to wash the chanterelles without the need, because they absorb moisture well and become watery. If the mushrooms are fresh and not cause concern, it is enough to sort them out and remove all the garbage.
It is better to choose a potato not too large in size, with an average starch content. Such potatoes are boiled in moderation, after cooking it will be quite crumbly, while retaining its shape. Such varieties as Picasso, Belarosa, Zhukovsky, Condor, etc. are suitable.
Chanterelle Potato Recipes
There are a huge variety of recipes for cooking, but we will present to your attention the two most popular: traditional and chicken. The first one will especially appeal to vegetarians, because potato with chanterelles has long been known as a traditional lean dish.
And the second method of preparation can be adapted to your own taste: for a dietary dish, take chicken breast, and if the extra calories do not scare you, drumsticks or carbonate are fine.
Important! Do not be afraid to confuse the false chanterelle with the real one - the false chanterelles have a darker, almost orange color, while the real chanterelle has a delicate golden color. In addition, the leg of the false chanterelle inside is hollow and thin, in contrast to the plump and full of pulp edible mushroom legs. And finally, the false gingerbread is a conditionally edible fungus, that is, the most serious consequences that can occur after its ingestion are ordinary indigestion.

- You can cook potatoes according to this recipe by first boiling the mushrooms (15 minutes in slightly salty water). It is advisable to do this if there is any doubt about the quality of the chanterelles, or if the children will eat the dish. In other cases, it is better to extinguish the roast using raw mushrooms, so it will turn out more flavorful.
- Sort the chanterelles, if necessary - rinse slightly in running water. Large cut, leave the small mushrooms intact.
- Chop the onion into cubes, grate the carrots on a medium grater, or chop with a shallow straw.
- Put the pan on the stove, heat the oil in it, into which put the onion. Once it turns white, add carrots. After the carrots have a slightly golden hue, add mushrooms to the pan. Fry dressing until mushrooms are ready. The fact that this moment has come, you will learn by the absence of excess moisture in the pan.
- Cut the potatoes into cubes or rather thick slices (0.7-1 cm), pour into a pan, pour water in such a way that it barely covers the contents. Put on the stove, bring to a boil.
- 2-3 minutes after boiling, add dressing to the pan (mushrooms with onions and carrots), mix. After boiling, make the fire moderate enough and simmer for about half an hour. Pay attention to the liquid level: it should cover the potatoes by about 2 cm.
- After 10 minutes add salt, after another 15 minutes - pepper and bay leaf. When the dish is ready, before removing it from the heat, add chopped greens and mix. Bon Appetit!

- Cut potatoes into cubes or slices. Pour in water and put to boil.
- Meanwhile, cut the chicken into pieces, heat the pan with butter, put the meat in it. Mix the meat immediately so that it does not stick to the pan. Fry until golden brown.
- Chop the onion into cubes, remove the top layer from the carrot and rub onto a coarse grater.
- Remove the fried chicken from the pan. If necessary, add a little oil to the pan and pour onions. When it turns white, introduce carrots. Fry until carrots are browned.
- If possible, meanwhile separately fry the mushrooms. If you have only 2 rings (for example, on a summer cottage stove), proceed to frying the chanterelles after frying the onion and carrot.
- By the time the potatoes boil and boil for 2-3 minutes, you should have 3 ready-to-cook foods: boiled potatoes, fried chanterelles and dressing with onions and carrots.
- In a pan with potatoes, add mushrooms and vegetable dressing, salt, add tomato paste and water so that it covers the contents by 2-3 cm, bring to a boil. After that, the fire should be reduced so that the roast is extinguished, not boiling.
- After 20 minutes, try the dish on readiness, add garlic, chopped into large slices, spices, bay leaf. If the roast is ready, remove the pan from the heat; if the potatoes are not sufficiently cooked, cook for another 6-8 minutes.
